This is another recipe that I got from my mother-in-law that I tweaked a bit
Chia Seed Balls
Mill together to make a paste (I used a food processor)
3 Large Dates
1 TBS Coconut Oil Melted
1/4 tsp Orange Extract
2 TBS Water
1 TBS Cacao Powder
Separate Bowl mix together
1/4 Cup Chia Seeds
1 TBS Roasted Flaxseeds
1/4 Cup Raw Unsweetened Shredded Coconut
1/2 Cup Raw Walnuts
1 TBS Cacao Nibs
Now mix the paste into the dry ingredients throughly
Roll mixture into small balls and then roll into some shredded coconut
Store in a sealed container in fridge

Banana Oat Bran/Oats Muffins
This is a flour-less, buttler-less and sugar-less recipe that I based off one my mother-in-law gave me.
*UPDATED**Recipe:
Wet ingredients
2 TBS Coconut Oil Melted
3 Large Bananas
2 Eggs
2 Cups of Almond Milk
1/2 cups of Raisins (I did not soak mine first)
Can also add dried cranberries, dried apricots etc.
Mix together and set aside
Mix dry ingredients in a separate bowl
1 Cup of Oat Bran
1 Cup of Oats
1 TBS Baking Powder
1/2 tsp Baking Soda
1 tsp Cinnamon
1 tsp Ground Cloves
1 tsp Ground Ginger
2 TBS Roasted Flaxseeds
2 TBS Chia Seeds
Handful of Raw Almonds chopped up (how ever many you prefer)
2 TBS Raw Sunflower Seeds
3 Handfuls of Chopped Raw Walnuts (how ever many you prefer)
1/2 Cup Shredded Unsweetened Coconut
Blend the wet and dry ingredients together and let sit for 15 minutes
Bake at 375 for 15 minutes or until done in the center
*Store in fridge in bag or airtight container

Cauliflower Mashed Potatoes
I made Cauliflower Mashed Potatoes a few weeks ago (without sour cream) and they were a success!!! I got my son Caleb to eat them thinking they were mashed potatoes.

Here's the recipe for Mexican Quinoa it was SO good and one of our new favorites. Instead of a jalapeño I used a green chile. The kids were going to eat it and I didn't want it too spicy.
