I was googling Mexican Quinoa and came across a recipe on a blog called Peanut Butter Runner. She has some recipes that look delicious and some great workout tips too.
Here's the recipe for Mexican Quinoa it was SO good and one of our new favorites. Instead of a jalapeño I used a green chile. The kids were going to eat it and I didn't want it too spicy.

Quinoa with Corn and Scallions
A few weeks ago I found this recipe on Just a Taste blog. It's was a nice change to have Quinoa cold.

First starting the NutriBullet plan I weighed 149. Yes NOT happy to publish it, but I did that to myself and I do have to own it. I am now 143 and have been hovering there for 2 weeks. I would like to lose a little more weight but I don't plan on doing that by dieting...my plan is do to it by making better food choices and exercising.
My mother in law let me borrow her book called Get Naked Fast and I highly recommend it!! This book has some great recipes and information on eating as much live food.
Another great book to have is the Juicing Bible. It definitely explains what fruits, vegetables and herbs help fight, treat or prevent certain illnesses.
We have not cut out meat from our diet but we have definitely limited our intake. We follow the NutriBullet plan and Juice or as they call it Extract twice a day. I try and stay away from as much processed foods as I can and I make my own homemade snacks with recipes I find.
I took this picture after our first grocery store run to buy all our fruits, veggies, raw nuts and seeds.
Here's a pic from our first Juice....definitely learned a lot. You do not need to pack all the greens and fruit in the cup, you'll end up with a very, very think drink.
Raw Revolution makes some great Organic, raw snack bars if you need a snack on the run. This one is my favorite!

I have been trying to find a good way to get my son to start eating more fruits and veggies and possibly recipes that I could hide them in. My mother in law told me about this new extractor, the NutriBullet that she bought and how she was liking it. That night my husband and I watched Fat Sick and Nearly Dead and decided that night we were buying the NutriBullet and we were going to make a change in our eating habits!
On July 14th we started using the NutriBullet and our lives have never been the same. I have become addicted on finding new recipes to try and how to incorporate a healthy eating lifestyle for me and my family.

Lil Parker turns one!
Oh sweet baby Parker! I remember holding you in the hospital and you were so alert with wide beautiful eyes. You have turned into such a silly lil man with the best expressions. Love you so much lil guy and Happy 1st birthday!
